Think of it this way.

These bags were all from previous jobs [ that the company ( that I worked for ) did for their customer. ]

Everything depends on its function in a sentence but it's okay to omit them in the one in question.

Usually "that" can be omitted when it's used as a conjunction:
I thought (that) we were friends.

or a relative pronoun:
I can't understand the things (that) she says.
