Comma—and, for example

Hello,

Are the following sentences correct:

1. "Josh works in New York, and Martin works in Washington DC."

2. "You can make, for example, baked salmon or chicken, for dinner."

I got the second sentence from a website, and it states this: "If the list of items occurs in mid-sentence, you need an additional https://www.pristineword.com/comma-simple-list/." Is there any reasoning?

Thank you very much for any help
