Seven-foot, six-inch Yao Ming reminded the Magic of the tall order they must face in trying to rediscover their mojo.

Do you use comma or hyphen between 'seven-foot and six-inch'?

Definitely NOT a hyphen or you end up with seven-foot-six-inch. It's correct as written. " because 7'6" is immediately easier to read than seven-foot, six-inch.

Although I'd write "At 7'6", Yao Ming reminded..." because 7'6" is immediately easier to read than seven-foot, six-inch.
