Hi,
my biggest disappointments were not being able to both (1) enjoy my job and (2) going to summer school to the fullest. is this ok?
I assume you mean this.
I wanted to enjoy my job and go to summer school. I wanted to do both of these things at the same time. I couldn't, so I was disappointed.

This is one disappointment, not two. I'd say it this way.
