If I wanted precision, I think I'd say it the long way,

eg It is made of many pieces of paper, and each piece has a different color.

Note that this sounds like no two pieces have the same colour. I assume this is what is meant

Paper made of strips (squares, triangles, rectangles) of different-colored paper.

Paper printed with stripes (squares, triangles, rectangles, irregular patches) of different colors.
