Colon(:) in writing, can a clause come after it?

I'd like to know the usage of colon(:) in writing.

All I know about it is listing, for example, There are two problems: air pollution and carbon dioxide emission.

I had thought a clause cannot come after : before I saw this verse in the bible.

1 Timothy 2:10 Here is a trustworthy saying that deserves full acceptance: Christ Jesus came into the world to save sinners – of whom I am the worst.

as you see the colon, a clause (Christ Jesus came~~) comes after it.

I want to know the usage of colon(:)

and one more thing, what is the general function of the dash(–) between sinners and of whom ~~ ? /


If a clause can come after colon(:), what is its difference from the dash(–) that the clause also comes after it.
