CULINARY INSTITUTE OF AMERICA APPLICATION ESSAY

I was born March 31^st, 1989 to my mother Kristine and my father Bill. I was born at Rome Memorial Hospital in Rome, New York, and I was definitely not born with a silver spoon in my mouth. It didn’t take long for me to change that and get a regular spoon in my mouth to enjoy food starting at a very young age.
When I was three years old my father, William became very sick with an unknown illness. Little did I know that he would never come home. He would live the rest of his life in a nursing home where he could receive twenty four hour care. He would later pass away in November of 2003 of complications from a seizure. This meant that now at the age of three I was the man of the house.
My mother, my sister, and I moved into the house that my mother grew up in; just a couple years after my father became ill. We moved in with my grandmother. Now I was the only male in a house full of females. My grandmother and mother always loved to cook and were very good at it. It didn’t take long for some of their talents to rub off on me. Some of my earliest memories of cooking and being in the kitchen are helping my mom and grandma prepare anything they would let me get my hands on. I quickly became more of an actual help than a disturbance in the kitchen. Like a lot of people the first dish I learned to prepare was eggs. At eight years old I was thinking of any excuse to make scrambled eggs, fried eggs, and omelets. My mom, grandma, and I would watch shows on the Food Network and it might not be original but it didn’t take long for me to become infatuated with Chef Emeril Legasse’s show Emeril Live. I saw new and exciting dishes that I had never even heard of and Chef Lagasse’s enthusiasm and joy got me hooked on cooking. I would watch cooking shows very often over cartoons and by age ten I truly knew there was nothing else on Earth that I wanted to be but a chef.
I cannot narrow my most influential person down to just one. My mother and grandmother have both equally influenced and encouraged my passion for cooking and becoming a chef. In the future I want to have the skills to be able to make my own opportunities and excel in a very difficult yet very rewarding industry. There have been times where I didn’t know if my dreams of becoming a chef would come true but I never gave up hope and I will do whatever it takes to fulfill my lifelong goal.
