Collectives of beast and fowl

According to dictionary.com we have:
partridge-singular and collective, partridges-plural
The same thing for grouse and quail.
But we have only:
pheasant-singular; pheasants-plural
The same thing for francolin and capercaillie.

Similarly, we have:
deer--singular, plural and collective
bear-singular and coillective; bears-plural
yak--singular; yaks-plural (no collective)

There are many others too, and sometimes you get different answers from different dictionaries. How does one keep track?
