Clauses, embedding, SFPCA and Taxis - Experts please

This question is for experts:

How would you break the following clause complex(?) into clauses and represent the relationship between them?

I know it the sentence isn't perfect, but I'd still like to analyse it the way that it was spoken:

This leads to my next reason why I want to bake a cake is that it's therapeutic.

Do you think it is:

This leads to my next reason why I want to bake a cake || is that it's therapeutic.

I'd still like to know the best approach to analysing it despite it's flaws.
