Choose something over something

I give you few examples below:

"In this job, I choose you over my brother." The synonyms of "choose'' are pick up, select, opt/go for. prefer.

1. my question is that may I use "over'' after all of these verbs for comparison? Can I use 'than" instead of "over" like "I choose you than my brother"?

2. What is the difference between "choose between all others" and "choose over all others"?

3. can I use "over'" and "than" after prefer like " I prefer you over/than my brother"?
