Can I say that

I had a chiropractic treatment from a chiropractor.

Short answer: Yes you can.

Treatment is normally non-count, though, so it's better without "a" (I had chiropractic treatment...)

Also, it sounds better if you just say: I went to a chiropractor. The reader/listener can guess why you went.

Yes, but it's just as well to leave out "chiropractic" because that's the kind of teatment that chiropractors give.
