Chip on

This is a dictionary definition:

chip in (or chip something in)
1. Contribute something as one’s share of a joint activity, cost, etc.

So it would be correct if I said "My collagues are always willing to chip in during busy periods." (As in they are willing to help complete the work that needs to be done. )

That's a good use of the term. It is also used in the sense of contributing money... probably just a coincidence that the ante for a poker game is often in the form of chips.
