'china restaurant' or 'chinese restaurant'

what is the difference between 'china restaurant' and 'chinese restaurant'
are they both correct?

my opinion: i think Chinese restaurant is correct but I know those people say China Town in the US but not Chinese Town
. I am confused.

when we are talking about the government of China, which one is correct?
