The phrase is normalliy expressed as "in short supply."

'Guys' would not be okay if I say this thing to a girl?

"Hi guys" is okay when greeting a mixed group or even (maybe) only girls, but "Guys like you" would not work for girls.

"People like you" "Women like you" "Folks like you" would all work though.

If you're female, it doesn't matter how old the girls are. If you're male, and the "girls" are older than 20, they may be offended. It's a double standard that I can come into the office and greet my two adult female coworkers with "Hey girls!" but if a male coworker called us girls we'd be annoyed.
