Mary is just being her usual chatty self.

Could you explain this sentence? [particularly I don't understand the "chatty self"]

So, I think, in this sentence the word "herself" separated into `her' and `self'.

I don't think that the reflexive pronoun has been separated. I think rather it is a use of the common meanings of the noun:

Self (noun)
1.a person or thing referred to with respect to complete individuality: one's own self.
2.a person's nature, character, etc.: his better self
