What is the right way to write the following : Opening ceremony or opening ceremonies ?

It depends on the nature of the event. If it includes only a single, distinct ceremonial routine, then use the singular; if it is better described as a variety of performances, etc. (as in the upcoming Olympics) then 'opening ceremonies' would be more appropriate.
