A Popular Food in My Country

Preserved duck egg, also known as "century egg or pidan," is a popular delicacy which is an oft-maligned, malodorous food common in Taiwanese cuisine. Though it may seem odd, preserved duck egg is actually considered an exotic delicacy in Taiwan. It's not for everyone, but of course that's what makes it so special.

Clearly, from its appearance, one is likely to ask: is preserved duck egg safe to eat? The answer is 'yes'. It is definitely safe to consume, if you can consume it, that is! People all over Taiwan have been enjoying the unique taste and flavor of preserved duck eggs for hundreds of years.

In Taiwan, it is popular to eat preserved duck eggs by slicing them, and placed on top of cold tofu with katsuobushi, soy sauce, and sesame oil. They may also be cut into chunks and stir fried with vegetables, which is most commonly found in Taiwanese cuisine.

I’ve been eating preserved duck eggs since I was a little kid. These eggs can be eaten straight from the shell, or as a side dish to porridge. I often eat these eggs out of the shell, drizzled with vinegar and sesame oil. The taste and texture of a preserved duck egg yolk to me is exactly appetizing. The egg white becomes a translucent brown color, and doesn’t have much flavor. The yolk is very creamy, and left a quite delicious creamy aftertaste.

So what does a preserved duck egg taste like? Its taste is unmistakably pungent with the odor of sulfur and ammonia, which might not sit well with many people. But it would take a while to get used to the smell, it’s not surprising that some people think they are preserved by soaking in horse urine. However, if you can manage to get past that and put one in your mouth, the strong and salty taste of it can turn out to be very addictive, leaving you wanting more.
