Carrots are vegetables or Carrots are a vegetable?

Hi,
I'm wondering about this case. Please tell me your opinion.
- Carrots are vegetables.
- Carrots are a vegetable.
Which one is correct? Can I use singular because carrots are just one kind of vegetables?

I would not be surprised to hear "Carrots are a vegetable" from a native English speaker, but it is not very good English, and "Carrots are vegetables" is. I think the usual way of putting that is "The carrot is a vegetable."
