Capitalization Question

I'm a 6th grade teacher and have come across two sentences which I'm unsure if some words should be capital or not. My grammar book shows the following sentences to be correct, yet some teachers are putting me on the spot saying that is wrong. Please help!!!

1. Many schools close for Christmas and Winter Vacation.

2. Emma is one famous English bulldog.

The main focus is on "Winter Vacation" in sentence 1 and "English bulldog" in sentence 2.

Please let me know what is correct and why! Thanks for your help!
