1. Do you use "You can't not love it"? I think it's not the way a person would normally say it, though it can be said in casual speech or advertisements. In a more formal situation, I would usually find another way of putting it, such as "You can't (help) but love it".
2. Furthermore, what compounds the problem is that, when written, the very particular emphasis placed by the speaker on not in can't not is entirely lost. What do you think?
