'I'll be busy next week.'

Can I replace 'this / that' for 'next'?
ex: 'I'll be busy this / that week.'

Well, you can say "I'll be busy next week" or "I'll be busy that week" and they both mean the same thing - you'll be busy at the particular time that has been suggested. But "next week" only refers to, well, next week. "That week" could refer to any future week, as in your second example about May.

Can you go to Paris with me on Tuesday?

Sorry, I'm busy next week.
