Can we say this?

Can we answer a question like this: - What did you do today?
- I was working on my papers.

Or should we use Past Simple?

I read that we use Past Continuous when prolonged action in the past was interrupted. But could we use it also in situations like the one above?

Web often do, but the main idea of the past continuous is to denote a past situation that was of limited duration.
