is it correct? ..can it be used? for example, if when someone want to be very affirmative and want to show that knows very well something (in this case those "streets").

You can use it the way you describe, but streets are plural, so you need "these" instead of "this."

How about:

I know these streets.<= This means that you have gone to a geographically familiar area. Perhaps you are giving a new friend a tour of your old neighborhood.

I think we're all in agreement that "I know these streets" is more common and the way to simply make a factual statement. I think the original question (although you should correct me if I'm wrong!) was to ask whether you can change the word order for emphasis.

The whole town looks so different from when I lived here as a child, but these streets I know!
