Can someone correct the bold?

Can someone correct the bold?

I flew round trip from NY to Rome on Alitalia last year. Most everything went well - no delays, no lost luggage etc. There was one aspect of the first trip that has become amusing in retrospect though didn't seem so at the time. I was among the first passengers to be served dinner - wow, I thought, how did I rate such service?! When I looked at the tray, however, it was a drab collection of (to me) very unappetizing food. Turns out that the airline had mistakenly recorded that I wanted kosher meals. Hope I don't offend anyone but Alitalia's kosher food selection tastes like cardboard to someone who likes really spicy exotic foods. When I asked for a regular meal, the staff said "not possible." There was only one meal per passenger and I had to eat the one I was served or go hungry. The fact that Alitalia made the mistake was irrelevant!! And I didn't get another meal. Finally one of the stewards took pity and scrounged a roll and some grapes from first class. This attitude was so surprising given the laidback approach of so much of Italian social interaction. I couldn't believe the rigidity. Surely there had to be one extra meal on that huge plane! But I got over it and now chuckle at the folly of such a stupid policy.

Here are my corrections.

Most everything ---> Mostly everything

There was one aspect of the first trip that has become amusing in retrospect though didn't seem so at the time.---> There was one aspect of the first trip that has become amusing in retrospect which didn't seem so at the time.

I was among the first passengers to be served dinner.--->I was among the first passengers to get served dinner.

I don't understand this one.

This attitude was so surprising given the laidback approach of so much of Italian social interaction.

Doesn't folly mean stupidity ---> at the stupidity of such a stupid policy. Is that correct?

But I got over it and now chuckle at the folly of such a stupid policy.
