Yes. You can say both of those. Typically, though, for the second one we say "Leopards are wild".

2. This works only if you are trying to say that there is only one leopard that it is wild and you don't know which one it is. Something like Leopards are wild is probably what you intend. If you know of a single leopard that is wild, you would say That leopard or The leopard. as
