Can conjunctions begin a sentence?

Can you out But at the beginning of a sentence. He wanted to make dinner. But he couldn't because he didn't have time.
I would want to do this so that I could have more simpler sentences rather than a super complex compound sentence.

It is perfectly OK to start a sentence with "and" or "but."

It's not wrong, but to my mind it makes your sentences seem a little 'jerky' and conversational in tone.

There's nothing wrong or unusual about
eg He wanted to make dinner, but he couldn't because he didn't have time.
It's smoother.
