It will be ready by this week.

Is it okay to say this, because the week is still going on?

It is not clear at all. Use: It will be ready by the middle/the end of this week. It will be ready by next week.

It is not clear at all. Use:

It will be ready by the middle/the end of this week.
It will be ready by next week.

What I want it to mean: it will be ready before this week (meaning the present week) is over. So I can't say weekend or middle of the week, because it'll be too specific. I simply want to give a general idea that it will be ready within this week.

It will be ready sometime (later) this week.
