I know what 'by' means in 'defended by':agent is............
What about undefended by?

That doesn't make sense to me.

1) "to undefend" does not seem to exist as a verb, so you cannot say A piece is undefended by another.
You can use undefended as an adjective, though. The piece was undefended.

2) Replacing undefended by with

'undefended' is an adjective, not a verb.

[The pawns] are always (left) in a position where other pawns do not (or cannot) defend them.

Similarly,

The thieves escaped unseen by the police.
Fortunately, his health was unaffect

I know how you can say, for example
- The fort was left undefended by the colonial militia.

I didn't know you could also say
- The fort was undefended by the colonial militia.
