But when it is brewed correctly

Hi

Some people complain about green tea having a bitter taste. People may get this idea because they brew it incorrectly. Green tea can be something of a prima donna, no doubt, but when it is brewed correctly, it is considered to taste grassy, slightly sweet, pliable on the tongue, delicious and healthy.

---- I take it to mean that when you brew the green tea correctly it is something of a prima donna - it tastes grassy, slightly sweet etc. ? Is it what the sentence above say, because it's not clear to me?

By the way, does "pliable on the tongue" probably mean that it is delicate?
