Could you please tell me why the article is missing here?

Human dignity perished on the altar of idolatry. And tyranny arose, grinding the human spirit beneath the conqueror's heel. But deep in man's heart still burned the unquenchable thirst for freedom.


Isn't heart countable?

That heart is countable is irrelevant. man without an article means mankind, all people, both men and women. man without an article does not mean any particular man.

Of course, not all of mankind together can literally have one heart, so this is to be taken metaphorically.
