(1) This particular document is called a Bill of Sale. Two of them would be two Bills of Sale. Sales is a line item on a Statement of Income and Expenses. What I am saying with these examples is that you have to learn individual usages for this word (and others) in commercial English.

(2) `Include` would be a finite verb not fitting into the grammar of this situat

No indeed, and not equivalent to the `object + -ing form` in your original enquiry. Moreover, I would add the conjunction for clarity:
