Could you tell me whether I should use "dogs" or "dog" and "species" or "race" in the sentence.

"race" sounds strange applied to dogs, and "species", for me, seems slightly too technical for this context. I would try to say it another way. E.g.:
I do not just love a specific breed of dog, I love all dogs.
