1. What is the outer layer of a (squared) bread called?

2. While we're on it, what are the different kinds of bread? I've heard of toast, bun, and pastry, but I'm not sure how they differ.

Bun - this is usually a small round sweet tasting bread.

Pastry is not bread. It's the stuff you find holding in the filling of a pie.
