If I just came upon a tray full of pieces of bread, I wouldn't have to ask because I know what bread is.

Nevertheless, if I wasn't really sure, I'd ask one of these:

What are those? / What's that?

The other situation that could occur is that someone brings out a tray with things on it that look like pieces of bread, show the tray to me, and say "You're going to like this!" or "You're going to like these!"

If they say "You're going to like this!", I ask "What is it?"
If they say "You're going to like these!", I ask "What are they?"
