1. I have seen "[...]" in essays a lot. What is it function? Why "there are" is in brackets?

2. Does "It's" mean "Lebanon is"

3. My understanding is not good, can you rewrite the second half of the sentence to make me understand? How diversity relate to "both in culture and cuisine".
