Blue blood indicates noble birth

Why does "blue blood" rather than "purple blood" or some other bloods indicate noble birth? Thanks

It is originally a Spanish expression. The veins of the paler-skinned, pure-blooded Spanish nobility showed more clearly than in the darker skin of those who had Moorish blood in their veins.
