carnevale = carnem levare (= to take meat away) or carne, vale (=farewell, meat!)

because the day after the end of carnival (Shrove Tuesday, or Mardi gras), Lent begins (Ash Wednesday), and Lent is (was?) associated with fasting and abstinence.
