Belief: you vs. I vs. one

A. I believe that when you know your work by heart, it becomes easier.
B. I believe that when I know my work by heart, it becomes easier.
C. I believe that when one knows his work by heart, it becomes easier.

1. For an interview, when talking about my belief or assertion, can I say A to the interviewer? I usually see "you" and "your" in books although it's actually the idea of the author.
2. I think B sounds awkward in my opinion although it is indeed my belief. Would you agree?
3. Do you think C is also OK? But which do you think is best and natural for an interview?

I prefer A, but I'm not sure if it's appropriate for an interview.
