Beginning a sentence with that

Hello. With respect to academic English, what is the difference between the following sentences?

a) It seems clear that bananas are the most popular fruit around the world.

b) That bananas are the most popular fruit around the world seems clear.

Is beginning a sentence with 'that' unsuitable for scholarly texts?
