Before the plunge

In Ravi's view, it is the team work which matters. 'You will be surprised to know the kind of planning in Bollywood. Every aspect gets finalised before the plunge. When you work with a professional team, the quality can get only better. It's only one film at a time.'

Please tell me the meaning of "before the plunge" in this context.

As far as I know, "to plunge" means "to jump into" which doesn't fit in this context at all.
