Can you give me an explaination about why before can't be used in that sentence?

The reason is simple. It's for the same reason, it's wrong to say "John brushes his teeth until he goes to bed every night". In most contexts, Until and Beofre are not interchangeable

But, there are exceptions in which either one can be used. "I won't let you borrow my bike until / before you return my basketball which you borrowed 2 weeks ago".
