2. If you are interested in knowing more about the town's history, you should visit the museum.

3. I'm really interested to visit an art museum.

Which of the above sentences is NOT acceptable?

However, in some other contexts, 'interested to know' would be OK.

interested in ... -ing is what you want.
You may occasionally read or hear the infinitive there, but, in my opinion, it is not the best choice.

In all the examples in the first group you posted earlier, interested involves desire.

I'm interested in visiting ... = I would like to visit ...
