Bare infinitive & ing clause

I was planning/planned on doing the task he had me do.

I was planning on doing the task she has me doing.

Is the first an infinitive and the second an ing participle, with both functioning as nouns? Why does the latter need to be in ing form?

Yes., but not coercive verbs. The most common verbs of sensation, I think: see, feel, hear:

She saw me writing the letter
She saw me write the letter.
