Can I say:
1. I bought this watch from a shop.
2. I bought this watch at a shop.
3. I borrowed this book from the library.
4. I borrowed this book in the library.
5. I borrowed this book at the library.

1. I bought this watch from a shop. Yes. But if you just say 'bought', 'from a shop' will be assumed.

2. I bought this watch at a shop. Not natural.

3. I borrowed this book from the library. Yes.

4. I borrowed this book in the library. Not natural.

5. I borrowed this book at the library. Not natural.

Hi,

Yes. But again, the phrase 'in a shop' seems redundant and even rather foolish.

You could say 'I bought this watch in the shop on Main Street.'
