"in the night" is rarely used, "during the night" is more common than the previous one , but "at night" is by far the commonest. The three terms have the same meaning.

There's a tendency for "at night" to have a contrast with the day:-
Moths come out at night

In the night, as well as that meaning too, also is used to mean in the particular night in question:-
He got up in the night to have a snack
