Assumes/assuming

hello.
I've been wondering lately what is (more) correct

She is assuming a posture of indifference

or

She assumes a posture of indifference.

The context is: I was sitting in a conferece room and making some notes about the person that was talking. I wrote "She assumes ...." , but after a while I had second thoughts if my notes was actually correct. Shouldn't it be "she's assuming" because I was describing what she was doing at the moment of my writing?
What difference it makes in this context "She assume or She's assuming"

I would be very greatful for your replay.

And what if I was whispering to , for instants, my colleague's ear, I mean expressing my opinion at the moment of the person's speech, what would be the difference between "She assumes a posture" and "She's assuming a posture".
