Can I say,

Jenny loves to paint portraits and (beautiful) sceneries. She aspires to be / to become an artist when she grows (up).

(a) Jenny likes painting with the watercolours. She started painting last four years ago. The artworks that she painted was beautiful.

(b) She loves portraits and sceneries. Painting is the hobby she likes the most. She aspires to work as an artist in the future.

(c) So her paintings are beautiful. She aspires she can to be / become an artist.

Scenery is uncountable. If you want a plural, use landscapes.
