"As / when" issue

Hi,

I have a problem concerning the use of "as" and "when". According to my grammar book, "as" is used only if two things happen at the sime time, for example: "As we walked home, we talked about movies". I find this confusing as I've seen many sentences where there's "when" instead of "as", such as in the following sentence: "I saw Sally when I was crossing the street." These two actions happened at the same time as well, right? The grammar book says that "when" is used if one things happens after another, hence I'm asking you about this problem. Can you give me a hand?
