As little carbs as possible

Eat as little of carbs as possible.
Eat as few carbs as possible.
Eat as little carbs as possible.

None of the sentences makes sense to me at least. But how should this be expressed correctly?

The second one.

The first one is ungrammatical. You may see the third one used, but it requires a reanalysis of "carbs" from a plural noun to a mass noun, which for me is a stretch. If you do want to use "little", then logically "Eat as little carb as possible" is more correct.
