In the sentence "As he thought the meeting with Tom is not easy" is the grammar correct?

This is not said. The person is thinking that the meeting is not easy (actually the meeting is not easy)

Mark was traveling in the morning to a coffee shop. In the afternoon he is in the meeting with Vince. As he thought, the meeting is not easy.

The thinking is happening during the meeting. I used as he though because he knew that the meeting would be very hard.

You need to decide which times you are talking about.You are switching from past to present tenses with no apparent reason.

If you say 'The meeting' is not easy', it needs to be part of a larger text that uses the Historical Present.
eg Tom gets up. He thinks that the meeting will not be easy. He eats breakfast. He goes to the meeting. As he thought, the meeting is not easy.

Then I suggest you post a slightly longer text next time, to show what you are trying to do. One sentence by itself just looks strange.

In a class, I would only teach this topic to learners who have an excellent grasp of more mainstream English.
